Hirtenkase Reserve is aged for an extra 7 months longer than the
regular Hirtenkase for a total of 17 months. During the affinage
process, this particular cheese gets more creamy than its younger
counterpart. Most cheeses, when aged longer, get more dry, but the
texture becomes more thick, not dry. It has a more rich flavor, and
is grassy, herbacious, and has floral notes. A great table cheese
that works well with other firm cheeses due to its unique
characteristics.
