Description

A small production certified organic cheese. The long maturing
process means that the Thermised milk has time to develop its
flavors and dissipate any bacterias lurking after the heat
treatment. It's not quite pasteurized but it's not quite raw milk
either. However, it has the benefit of the rind being washed and
rubbed with wine to give full bodied fruity and nutty flavors.
