Description

Challerhocker is made by Walter Rass at a small creamery in
Toggenburg, Switzerland, northeast of Zurich. This is a firm cheese
made from partially thermalized cows milk. The name Challerhocker
means sitting in the cellar which is what this cheese does for 10
months. Close in style to traditional Appenzeller, Challerhocker
takes on a more earthy, buttery nature reflecting Walters variation
of the recipe and the flora of his cellar.
