This clothbound cheddar is a cooperative effort between two small
Vermont artisan cheesemakers, Jasper Hill Farm and Cabot Creamery.
Cabot produces sixty wheels each quarter, then sends them to Jasper
Hill Farm to be expertly aged. The results of twelve months of
aging is amazing, sharp, nutty and rich, and obviously refined.
