Went out and bought the grypton portable tripod and am very impressed with it. Will use it from now on when taking video in the car.

Brandice films a lot of her videos driving, too.
I've done the occational video while driving.
It's no less safe than thinking about things in your mind.
As long as your wearing a seatbelt, I'm okay with it.
