Here's a good one: http://www.adagio.com/info/preparation.html The main thing, I think, is 5 minutes with boiling water for black teas and 3 minutes with rumbling water (the tea pot has started to rumble but not to whistling) for green teas.

Good question and something we'll feature in later shows. The general rule of thumb is one non-heaping teaspoon per serving. If you're brewing a pot, it's one teaspoon per serving plus one. Since everyone's tastes are different the best thing to do is experiment and see what works for you.
