Our history



The origin of Parés Baltà goes all the way back to the 18th century. In 1790 the first vines were planted on the estate that now surrounds the winery.

Mr Joan Cusiné Hill comes from a family of vine growers and, already from the age of seven, he helped his father to cultivate the vineyards. Today, more than 80 years later, he still keeps on working, controlling a part of the viticulture.

Penedès is a comarca (county) in Catalonia, Spain.

The sparkling wine of Cava was created in 1872 by Josep Raventós. Raventós decided to create the dry sparkling wine that has become the reason for the region's continued success.

Macabeo (Macabeu in Catalan) is a variety of wine grape. It is also known as Alcañol, Alcañón, Blanca de Daroca, Charas Blanc, Forcalla, Gredelín, Lardot, Maccabeo, Perpignan, Queue de Renard, Rossan, Viuna or Viura.

Parellada is used in micro-distilled absinthe Obsello which, in addition to being produced in the same region, uses the wine of these grapes in its base spirit.

Xarel·lo is also known under the names Cartoixa, Cartuja, Cartuxa, Jaén Blanco, Moll, Pansa, Pansa Blanca, Pansal, Pansalat, Pansalet, Pansar, Pensal, Prensa Branco, Vinate, Vinyater, Xarell-Lo, Xarello and Xarelo Blanco.

Maria Elena Jimenez and Marta Casas are the winemakers and oenologists.

Foie gras is the the fattened liver of a duck.
The au torchon version is cooked in a towel.

Sauternes is a French dessert wine from the Sauternais region of the Graves section in Bordeaux.

Chaource is a French cheese, originally manufactured in the village of Chaource in the Champagne-Ardenne region.

In the past cava was referred to as Spanish Champagne (no longer permitted under EU law), or colloquially as champaña or xampany.

Côte-d'Or is one of the original 83 departments created during the French Revolution on March 4, 1790. It was formed from part of the former province of Burgundy.

At Parés Baltà we have been cultivating our vineyards in an ecological way since 1790, and since the 2004 harvest the vineyards have been certified as ecological/organic.

At Pares Balta Sheep fertilize the soils and beehives to encourage pollination.
