Sauternes is a French dessert wine from the Sauternais region of the Graves section in Bordeaux.

Chaource is a French cheese, originally manufactured in the village of Chaource in the Champagne-Ardenne region.

Cava is the name of a type of Catalan white or pink sparkling wine, produced in different areas of Catalonia, Andalucia and Extremadura but mainly in the Penedès region in Catalonia, 40 km to the south west of Barcelona.

The amount of sugar (dosage) added after the second fermentation and aging varies and will dictate the sweetness level of the sparkling wine.

Côte-d'Or is one of the original 83 departments created during the French Revolution on March 4, 1790. It was formed from part of the former province of Burgundy.

Xarel·lo is also known under the names Cartoixa, Cartuja, Cartuxa, Jaén Blanco, Moll, Pansa, Pansa Blanca, Pansal, Pansalat, Pansalet, Pansar, Pensal, Prensa Branco, Vinate, Vinyater, Xarell-Lo, Xarello and Xarelo Blanco.

The origin of Parés Baltà goes all the way back to the 18th century. In 1790 the first vines were planted on the estate that now surrounds the winery.

Maria Elena Jimenez and Marta Casas are the winemakers and oenologists.

Pares Balta has produced wine organicly for three centuries.
