The most important thing for Sandrine in making the wine is to respect the source and the raw material, so to speak, to respect the grapes and extract all aromas and elegance that the grapes and the noble rot (botrytis cinerea) can give.
Chateau d'Yquem is located in Sauternes in Bordeaux and is one of the world’s most expensive sweet white wines, in fact, it's simply one of the world's most exclusive wines all categories. Yquem is the biggest property in Sauternes having some 100 hectares. The size adds complexity and depth to the wine.
Sandrine also talks about how to pair Yquem wine with food – matching it with for example lobster and shellfish or even fish. Also chicken or veal can be delicious with Yquem.
Sandrine finishes with a few short words on the 2009 vintage. Early in the season everything looks very promising with just enough water, but perhaps a little bit late development.
